Lin AT Lin's Gourmet Express
Entering Lin's Gourmet Express, one is instantly welcomed by a kind smile as though they are coming home for supper. This is the style of restaurant that Xaihong Lin thought of when deciding to open in Summerside, PE.
Wanting to try something new after arriving in Canada, Lin enrolled in the culinary program at the Humber Institute of Technology and Advanced Learning College. Lin became highly accomplished at Humber College and received various scholarships in addition to six Dean's Honors, the President's Letter Award, Wine and Spirit Education Trust (England) with Merits Award to mention a few.
After graduation, Lin worked as Chef at the Humber College and in restaurants in Ontario’s wine region such as the Inn On The Twenty; considered to be one of the best Niagara winery restaurants for its farm to table approach. Arriving on PEI, Lin's love for cooking found him at the Culinary Institute of Canada, Charlottetown. It was after graduation that Lin took the chance and opened his own restaurant in Summerside. All his culinary education helped to focus his cooking style using high quality basic techniques with close attention to the finer details of preparation, which could easily be overlooked in a busy kitchen. Lin looks forward to developing new dishes with nice cuts of beef and delicate seafood but his specialty would be pairing quality foods with fine wines.
"Any fine foods to pair with fine wines since the restaurant project is part of my life; I enjoy the life from doing it." Says Lin, when asked what he looks forward to making.
This will be the first year Lin has been a part of Beef n' Blues. He is looking forward to being a part of this year's event and contributing to the evening's fine dining element.
